Ingredients

Chef's Pro Tip

Oven temperature is critical for lava cakes. Use an oven thermometer to ensure it's exactly 400°F so the outside bakes perfectly while leaving the center molten.

Preparation & Instructions

  1. 1

Preheat your oven to 400°F (200°C). Butter two 6-ounce ramekins generously and dust the insides with cocoa powder, tapping out the excess.

  2. 2

In a microwave-safe bowl or double boiler, melt the chopped chocolate and butter together until smooth. Let it cool slightly.

  3. 3

In a separate medium bowl, whisk the whole egg, egg yolk, sugar, and salt together until pale yellow and slightly thickened, about 2 minutes.

  4. 4

Gently fold the melted chocolate mixture and flour into the egg mixture until just combined. Do not overmix.

  5. 5

Divide the batter evenly between the two prepared ramekins.

  6. 6

Bake for 11-13 minutes. The edges should be firm and set, but the absolute center should still be soft and jiggly.

  7. 7

Remove from oven and let cool for 1 minute. Place an inverted plate over the ramekin, carefully flip both over, and lift the ramekin. Dust with powdered sugar, garnish with raspberries, and serve immediately!
