Poach the egg: Bring a small pot of water to a gentle simmer (just bubbles rising). Add vinegar. Crack the egg into a small ramekin. Use a spoon to create a gentle whirlpool in the water, and slide the egg into the center. Cook for 3 minutes for a runny yolk.
